Pasta Allocca

1 pound protein enriched or whole wheat pasta
6 cloves garlic, chopped
1 red bell pepper, chopped
1/2 pound mushrooms, sliced
1/2 pound of green vegetable (kale, broccoli, etc.)
3 tablespoons cold pressed olive oil
1 (16 oz. can) pitted black olives, chopped
1 (16 oz. can) diced tomatoes
1/2 teaspoon basil
1/4 teaspoon black pepper
Dash of cayenne pepper
1/2 teaspoon oregano
1/2 teaspoon parsley
1/2 teaspoon sea salt


Place the olive oil in a deep skillet. Sauté' the onions
and peppers for 5 minutes (medium heat). Add the
mushrooms and cook for 5 minutes (medium heat). Add the
garlic to the skillet and continue to sauté for another 5
minutes. Add the remaining ingredients and continue to
sauté for another 10 minutes. Begin cooking the pasta (8-
10 minutes). Continue cooking until pasta is cooked. Drain
pasta. Place into pasta dish and pour contents of both
skillets over pasta and mix thoroughly. Serves 2 to 4
people.
