Butterscotch Pudding

15 oz. can pumpkin
1/2 c. raw cashews + 3/4 c. water
1/2 c. dates
1/3 c. maple syrup or 1/4 c. honey
1/8 tsp. salt
1 tsp. vanilla
1 tsp. maple extract
1 1/4 c. water

BLEND cashews in 3/4 c. water until smooth. ADD all other ingredients, and BLEND
thoroughly. SERVE with granola.
