2 1/4 c. kidney or pinto beans (1 pound)
1/3 c. bulgur wheat
2 tsp. salt
7 c. water
3 tbsp. NO ALARM CHILI POWDER
1 medium onion, diced
1 green pepper, diced 2 cloves garlic, minced
1/3 c. tomato paste
SOAK beans. POUR off water. SIMMER with 7 c. water in saucepan until soft, about 2
hours.* ADD remaining ingredients. COOK about 30 minutes longer or until onion and
peppers are cooked. YIELDS 7 cups.
*May cook in crockpot overnight on low. Add remaining ingredients in the morning and
continue to cook.
NOTE: may need more water.
